I saw on the Wiki page that the maximum of alpacas is 80, with the Hotel VIP.

So how do I do it ?

Hi,

Every alpaca you catch that has a colour combination you haven't caught before will be recorded in the colour index. It doesn't matter if you sell the alpaca, the colour combination is recorded in the colour index. So you could catch alpacas and sell them to eventually collect all colours in the index. If you open the colour index up you can click on the colours and you will be shown an alpaca with that colour combination.
